Let's make this week-end delicious ! (:
Ingredients :
2 whole chicken
few cardamoms
10-12 cloves
3 tbsp chilli powder
40 gm coriander(whole)
20 gm cumin(whole)
2 cup yogurts
2-3 cup dry coconut
8 eggs
Mustered Oil
4 inch garlic
2 large onions
10 gm pepper
3-4 tbsp poppy seeds
a handful raisins
a handful cashew
2 tbsp turmeric
pinch of nutmeg powder
few green chilies
salt to taste
1. Clean and wash the chicken .
2. Wash inside with tepid water .and Then, using a sharp knife, cut slashes in the flesh to allow the marinade to penetrate.
3.Fry one onion till golden.
4. Mix together four chopped hard boiled eggs ,fried onions , raisins ,cashew ,a pinch of the pepper and a little salt .
5. Stuff the chicken with the mixture and stitch up .
6. Grind together remaining spices and dry coconut . Mix with yogurts.
7.Then marinade the stuffed chicken into this mixture for 30-40 mins.
8. After that, preheat the oven at 400 degree F (apprx 200 F)
9.Place the chicken on a rack in a roasting pan, brush with oil, and cook, turning once, 45-50 minutes until the juices run clear when a piece is pierced near the bone with a knife.
10. Remove when done .Take off the stitches .
11.Serve with slices of eggs and sprigs of cilantro and slices of cucumber, red onion, tomato, and lemon.
